I know, I know...I'm taking a break...blah, blah, blah...but I had to share just a short note with you today....Just because I'm taking a break, doesn't mean that you all can't continue on with our Photo Challenges, how rude of me...here is this week's dee-lightful, dream of a photo for you:
(Photo Courtesy of A Creative Mint)
I know I am not the only one obsessed with Leslie's photos...they take me to a different world each time I pop over to her blog...what a sweet gift she has and I'm so thankful she shares it so freely. As always, please share your creation with me if you'd like by linking me to it...I'll happily pay you a visit. I'm officially two weeks behind in our challenges....I can't wait to create.
Since tomorrow is St. Patty's Day, I thought I'd share a perfectly green, family favorite recipe with you all...on my husband's side. Sadly, I have never tried it, but he has been asking for me to make it now for almost 11 years....my sister-in-law Kate just sent me the recipe yesterday...thank you Kate....which I think she got from my mother-in-law...thank you mom-in-law :) It's perfect for a mini St. Pat's celebration....I'll be surprising my little bean and husband with this tomorrow for dessert.
Grasshopper Pie (Phillips style)
1 12 oz. can Evaporated Milk
1 3 oz pkg Lime Jello
1 3/4 c Boiling Water
1/4 c Lime Juice (about 2 limes)
2 T Lemon Juice
1 c Sugar
3 c Coconut or Macaroon Cookie Crumbs
1/3 cup Butter, melted
3 oz Chocolate, grated
Chill a large mixing bowl and the can of milk thoroughly.
Mix 2/3 cookie crumbs with melted butter and press into 9x13 pan. (Set aside 1/3 cookie crumbs to sprinkle on top later.)
Combine jello, juices, boiling water and sugar. Partially set.
Whip chilled milk in chilled bowl until stiff. Fold in Jello mixture.
Sprinkle remaining cookie crumbs and chocolate shavings on top.
Chill and serve.
(You can substitute with a graham cracker crust instead, and sprinkle graham crumbs on top.)
And...lastly....since many of you have been asking, I will be cooking up a bow tutorial for you all....free of course. I hope to have it ready for you all right here on my blog next week sometime. Thank you for asking...this will be fun.
Happy Tuesday my friends.
Melis

Another yummy challenge...and grasshopper pie to boot. Miss you, but I totally understand. You are blessed with such a lovely family and nurturing takes time...so does feathering a new nest. There is a season for everything...don't worry we will be waiting whenever you pop in. Thanks for stopping in on my blog and leaving a comment. Many blessings, Patty.

Melissa, you failed to say what size can of evaporated milk, plus I'm assuming you mean 1/3 cup of butter?
